The Oyster Market

New York’s Price of a Dozen.

—Below minimum sample; geography pending
—Promotions kept separate
—12 × eligible regular composite
Observed / directory universe; not index eligibility

Source retrieval is not a menu-change timestamp. No neighborhood reaches the three-establishment regular-price minimum.

The price record

How we count

—A record must begin somewhere.

Minimum 10 establishments for the tracked-city composite; minimum 3 for a neighborhood. No arrows or daily changes appear without comparable saved observations.

01 / THE NEIGHBORHOOD BOARD

The price around the corner.

19 proposed districts

A dash means withheld, never zero. Counts are current unit-confirmed menu samples; formal boundary assignment is still pending. Open a neighborhood for source evidence, service restrictions, price range and existing finder entries.

02 / THE PRICE MAP

Same city. Different asking prices.

03 / THE WHOLESALE DESK

Before the oyster reaches the table.

No exchange-listed oyster futures contract was identified in the CME, Euronext and JPX catalogues reviewed. Physical buying occurs through producers, wholesalers, distributors and seafood auctions. There is no invented ticker here.

Available now: delayed producer statistics. These are USDA census-year sales averages, not live wholesale bids, not restaurant prices, and not interchangeable with dollars per oyster.

Report released December 2024. Species, product size and sales channels differ. No meat-pound / live-oyster conversion is attempted. Read USDA Table 7.

The producer record

USDA census data are accessible. NOAA landings and trade data are delayed; NOAA oyster weight-basis metadata and automated query access need verification before ingestion.

The commercial quote

Expana expressly covers oysters. Oyster-specific units, history, cadence and public display rights require a commercial agreement. No licensed quote feed is connected.

The physical trade

Browne Trading offers account-based wholesale ordering. Sydney Fish Market runs an actual seafood auction; its portal’s oyster coverage is unverified.

04 / MARKET NOTES

A few matters for the record.

A producer price is not a menu price.

The 2023 aquaculture census reports Eastern and Pacific food/market oyster sales at $2.16 and $2.69 per live-weight pound. These annual averages describe different species and sales mixes. They do not indicate what a restaurant will charge this evening.

The trade desk keeps a calendar.

NOAA says foreign-fishery-trade data are normally released 43 days after month end. Import values and export values also use different valuation bases. A dollar-per-kilogram change can reflect product mix rather than a like-for-like oyster price move.

05 / THE METHODOLOGY

The figures should withstand a question.

How SOPI is calculated

One establishment, one vote. Select the lowest advertised qualifying standard raw-oyster PPO per establishment. Countable single oysters and explicit standard half-dozen/dozen orders qualify; normalize the latter by quantity. This measures entry-level advertised pricing, not a typical bill or every oyster variety.

Neighborhood PPO = sum of venue PPOs ÷ venue count

Dozen Standard = 12 × applicable PPO

The city composite weights qualifying establishments equally across the tracked Manhattan + Brooklyn universe. It is not a representative five-borough cost-of-living measure. Happy-hour observations are always separate and carry service restrictions.

Release rules. Verification age ≤30 days; minimum 3 venues per neighborhood and 10 in the tracked-city composite. Report count, range, coverage, oldest/newest verification and calculation date. Withhold means below threshold. Formal geography approval is an additional release gate.

Changes. Require real immutable prior snapshots, unchanged methodology/boundaries and matched restaurant membership; otherwise show unavailable. No retrospective reconstruction from today’s menu.

Excluded. MP, ambiguous quantities, mixed platters, required add-on bundles, unresolved conflicting prices, stale sources and unreviewed machine extraction. Optional fees, tax and gratuity are excluded.

Geography, source rights, and limitations

The 19 board districts have proposed street-level scopes in the review package. They are not official NYC statistical areas. Non-overlapping versioned polygons, boundary tie-breaking and address-level assignment remain to be approved; current neighborhood associations retain directory labels. Prices are verified advertisements, not inventory checks. No menu-change date was supplied by the sampled restaurants.

Public page access does not grant permission to republish menu images or full text. This draft records small factual price observations and links to primary sources. Source-specific automated collection and licensing need review before scheduled ingestion. No paid feeds have been assumed.

Calculation, history and source updates

Accepted official-menu observations are stored as new records. Calculation uses the latest eligible price at each establishment, with a 30-day source-age limit. No price is filled in when a menu is unavailable.

One immutable snapshot may be recorded per New York calendar day. Repeated calculations return that day’s saved record. Source verification and the index calculation are separate: a new calculation does not mean the menu changed.

Automated price collection and commercial feeds are not connected. Accepted observations are reviewed manually. Neighborhood boundary approval remains a separate publication gate.

Price verification and corrections

Price records are entered and checked by the site owner. Exact order quantities, official source links, evidence, and promotional conditions are required. Browser drafts do not become public observations.

Coverage and availability

Available: source-backed menu observations, neighborhood search and detail, restaurant price pins, owner-verified record entry, saved calculation history, and delayed USDA statistics. Averages and changes are withheld until their sample, geography and historical-comparison requirements pass.

Not available: a licensed commercial quote feed, automatic menu extraction, or average-price neighborhood shading. These require additional data or source rights. The composite currently covers the tracked Manhattan and Brooklyn universe only.
